Pat Henderson, Chief winemaker at Kenwood, educator, and respected wine consultant, will be joining us for the first of a two-part series focusing on the critical steps in winemaking, some technical aspects to expand your understanding of winemaking processes, and using advanced techniques to set the flavor and style of your wine. 

This first session covers the topics of determining fruit ripeness and maturity, optimizing the various aspects of fermentation and must amendments, and how to successfully perform or prevent malolactic fermentation. Potluck lunch to follow.
